How do I limit the output of an amp? Long

Here is the situation. I am looking for 6 channels of amplification for my computer based system. The PC will function as a digital crossover sending approriate crossed over signals to my 2way speakers and subs.

The PC will be doing the volume control and I would like to get an amp or amps that are lowpowered enough so that I can be at the top of the volume control range. I don't hear any thing bad at the low part of the range, but you know, that PC is just throwing away bits...

The other and main reason is that the way the volume control works in the PC, I can adjust individual outputs relative to each other and they will track when I turn things up and down. But if say the HP is at -12 and the LP is at -20 (say 8 away from each other) the relative balance will change. SO whan I hit 0, the hp is at 0 and the LP is at -8. If I hit it again, the HP is still at 0 and the Low pass is now at -6, now 6 away from the lowpass so the volume is now off. So I need to have comfortable listening levels just below the top of the range.

The PC outputs balanced so I would like to stay with amps that accept that, and I want amps that are efficient and don't get hot. (If I was OK with heat and big power draw, I would just buy a 5 channel Pass to go with my 2 channel one).

That leads me to "digital amps". The only thing is that most of them are super powerful, or 15 watt jobbers. The closest I can find is the Redwine battery amps that are around 30wpc. BUT, I can't imagine one of them running the subs I'll be building. I really need a 50-80 watt ss amp but can't seem to find them that accept balanced signals)

So is there a way to limit an amps output without hurting the sound?

SOme of the digital amps I am looking at have switches to change the gain. Would this really help? And is there a way to look at the output of my card and figure out how much amp output there will be at max volume?? Is that the amp sensitivity spec?
