At least not easily nor inexpensively.S/PDIF is not used in the semi-pro/pro market for multichannel digital interconnection. AES3, TDIF and ADAT are, with ADAT being optical and the others implemented through multipair cabling and D-Sub connectors. 8 channel ADAT is limited to no greater than 24 bit at 48K. To get higher resolution, the channels are reduced.
A problem for you would be the issue of how to break out the channel pairs within the ADAT datastream. A digital processor that allows you to access the individual channel pairs is not cheap.
If you do opt for obtaining three inexpensive A/D converters, know that you must sync their clocks for them to all work together into your receiver. Look for word clock ins and outs.
