Back Cans-for ceiling speakers


Ok,..I have to admit im a little confused about this topic.
I was allways under the belief that it was whatever the building code for the area dictated,.much like any other electrical box,outlet..etc.
A large retailer in our mall has approx 35, 8" typical ceiling speakers,all in a high false ceiling,.and all with back cans
Its an all Bogen system, right back to the 25 yr old challenger amp!
..They sound horible!
Yet in the mall, they have the 8" muzak speakers(original jensens) mounted in the solid drywall type ceiling,.in a strip bridge arangement
They sound great.
A contractor told me that the Cans improve the bass response, but so-far i haven't heard that.
Maybe thats just for new equipment..

Im asking this because i have about 25 celing speakers to put in the false ceiling and drywall of our church(lobbys..washrooms hallways..etc)
And i want to get the best sound i can without haveing to go to a flush mount speaker like a paradigm or something.
