"High quality" is pretty subjective, but you should take a look at the Fostex FR2LE portable stereo recorder (fostex.com, I think). It'll be in the $600 range. As far as mics are concerned, if you're recording fairly soft ambient sounds (like leaves rustling, birds, babbling brooks), you need to be concerned with mic output so you don't make recordings with 40 dB s/n. ;)
Also make sure that whatever recorder you choose can record to the type of file you need to work with. And for heaven's sake, don't record to mp3! :)
