Non oversampling DACs and oversampling have different sonic characters. You can read a lot about it here if you do a search, but there are always exceptions that sound a little different from the rest of the "family". You have to listen to a few to see which you prefer.

Bits and sampling rates: you want higher in both. An analogy in a digital photo: the sampling rate is the resolution and the bit rate is the colour depth. If your photo has low resolution and you watch it on a high resolution screen, you will not get the same result as with a high resolution photo. The same with music files, if you digitalize your vinyl 16bit 48kHz, it will not be better (overall possibly worse) than a CD. This will not be helped if you play it back on a 24bit/96khz DAC. You will need to digitalize at 24/96, which take huge HD space, though.
If all your files are 16bit/44.1kHz, you will not directly benefit from a DAC capable of higher rates and bits. One of the best DACs in the world (Zanden) is only 16/44.1

There are many ways to get music out of a Macbook: you can use its own optical output to a DAC or you can get the digital data out through USB or firewire directly to DAC that can receive it. Alternatively, you convert (with an additional device) this signal to spdif and than you can use any DAC on the market. There is also the Squeezbox and Transporter that receives the digital data though ethernet. I've tried all these, but for best quality, things get very expensive here, too...
