The short answer is that the "universal" in Universal Serial Bus is marketing hype. The longer answer is that audio applications require real-time performance. This makes them uniquely difficult, although their total I/O requirements may be low compared to other computer applications.
People use USB audio devices because they are relatively inexpensive and can be made to work quite well. The alternative approaches all have their own pitfalls, and you would hear more about these on this forum if more people were using them. If you know of a better approach, I'm sure people would like to hear about it.
