I'm a Mac guy who plays with AIFF files and uses HairerSoft Amadeus Pro for editing. My guess is that you're going to want to keep everything 16 bit; and if you're burning an audio CD you definitely need 16/44.1 for your final product.
But I was poking around the Wiki Audacity documentation yesterday and read something about how when editing, the software converts to 32 bit then back to the original format. So I'm not sure how to best use Audacity.
