I have been looking at these same issues. For listening to music, wouldn't something like the 'Squeezebox' work? It gives you an iPod like interface, over wifi, to your music library on your Mini. You can sit in front of your stereo and control the Squeezebox from its remote, while the music resides on the Mini in another room.
You can use the Squeezebox's DAC, or an external one. I think Roku and Linksys also make similar devices.
