The NICs isolate by transformers. If you take an UTP cable you won't have a groundloop into your device. You achieved your target with lowest effort.As extension, assuming e.g. EMI/RFI jumps over at the NICs, you can use a small wireless router as bridge. It'll have the same isolation effect as your fiber. On the last couple of inches (router/bridge > PC) use a UTP jumper cable. That you'll need anyhow in either setups.
Have fun with your optical adventure.I do think going fiber is an overkill.
