I read a bit more about how these high density sensors are used and it appears to be analogous to an oversampling audio ADC except the oversampling is done in the spatial dimensions instead of time. In this case, the spatial frequency spectrum of the image is effectively band limited by the optics. The sensor samples it at a resolution greater than what is required to capture the frequency content of the image, and then noise shaping techniques can be applied to improve the signal to noise ratio of the image.
