I cut the power lines in a usb cable and a Cambridge Audio dacmagic is working the same

In which case, the DAC's Gnd is connected to the host's Gnd by some other route. USB's D+ and D- lines are a differential pair and work only where there's a Gnd connection as reference.

Whether the +5v line is needed for handshake purposes is a matter of design. Some DACs use it, others, inc mine, don't. There is perhaps a slight noise-reduction benefit in not using it but it's not a show-stopper.
