I have the M60's on refurbished ESL57's (Wayne Piquet panels) for 4-5 years now, and it is by far the best sound I ever heard. You will be surprised what great quality bass the Atma-Spheres get out of the ESL57's. I recently also experienced that an MP-3 (or MP-1) preamp gets the combination to a really unbelievable performance, and I thought my previous preamp was already pretty good.
About the tubes not being matched: Statistically, the differences between the individual tubes even out because the triodes are connected in two sets of eight. Next, the remaining difference gets evened out with the potentiometer. I don't think the situation is really comparable with conventional push-pull amps where there are output tubes in parallel. There, more tubes means more power and thus a heavier output transformer, which then is what spoils the party.
I wouldn't worry too much about the technology before you've listened the ESL/OTL combination in the first place. And once you have, your questions probably will focus on HOW it works, not IF it works. Have fun!
