The biggest difference will be speed and dynamics which is where the ST-30 excels. I'm assuming your EVs are fairly efficient and are a highest stable load. With my Edgarhorns, 106db and 16ohms, I tend to use my 45 amps a bit more because I like the mid-range lushness. The ST-30 is close, but can get just a bit hard when driven at higher volume levels. That may be because it's just more accurate or it could be because it's an older one without some of the newer upgrades which Ralph claims addresses that concern. (Yeah, Ralph, I procrastinated and I'm really going to send it to you, this week, for sure.)
My 300B amps just don't compare real well to either the ST-30 or the 45 SET amps as they strike me as lush, but a tad mushy which could be the tubes, whatever. The ST-30 is a lot cleaner, quicker and far more dynamic. It only loses to the 45s in sweetness and micro-dynamic midrange shading and contrast very slightly, kills the 45s in overall dynamics and authority.
