You just have a world view (or a DAC view) that apparently prohibits you from understanding the answer. DAC chips don't make any assumptions about polarity nor do they flip or change polarity dynamically. Most have a positive and negative polarity output (i.e. a differential output) and a given digital input sample level will correspond to a well defined analog output level on these outputs. The input to DAC chips is a two's complement fixed point number and a positive input number will produce a analog positive output on the positive output pin.
You may know of DAC components or CD players which do "interesting" things when it comes to playing with polarity, but DAC chips don't.
