First question - why do you think a youtube video has frequency extension beyond 12kHz? Personally, I'm surprised it's that high. :^)
The most subtle and sensitive tuners of violin plates are generally those with the most experience - in spite of their loss of hearing above 4-8kHz. There was a study I read ... I conclude that sinewave frequency response is a poor indicator of hearing acuity.
