1/2 the sample rate sets the highest frequency representable. I.e. in an ideal world if the input is bandlimited (e.g. doesn't have any frequency components above, say 48kHz) a sample rate higher than 96kHz won't be more accurate than a 96kHz sample rate. (In the real world the anti-aliasing filters used might have a bigger or smaller effect, as well as the noise picked up in the analog...)
I'm no vinyl expert but there are probably few with anything much above 35kHz or 40kHz.
Don't get me wrong, you might get better results with 192kHz but I wouldn't be surprised at all if you got better results with 96kHz. When you push technology too far something has to give... 96kHz probably will sound better than 44.1kHz and if you are building DVDs it gives the most flexibility (e.g. you don't need to produce a DVD-A and if you build a DVD-V it will be playable on more players.)
