If you do any processing I doubt seriously whether you'll hear the difference between 96k and 192k.

There's no info that you care about when transcribing from vinyl above 48k so there's little technical reason for preferring 192k in this case. (But who knows since the biggest differences will be caused by your A/D.)

But I also doubt that any reasonably priced consumer A/D is going to build a file that sounds significantly better at 192k instead of 96k. In fact I bet that some sound better at the lower rate.

You should try a test run or two (for lots of reasons) and see if there's a difference that you care about.

All of that said, I defer to anyone with practical experience here :)
