Yesterday I had an interesting discussion (phone, not asylum-based) with Constantine Soo of www.dagogo.com, about the same points that you and he had discussed. I would like to share a bit of my experience (I am the managing director of the high-end loudspeaker brand YG Acoustics www.yg-acoustics.com), and hopefully clarify from a production-standpoint some of the issues:
First of all, regarding Constantine's statement that "if we all listened to mono, there would be no need for the drive...". This is true in some ways - for instance, the use of stereo speakers has forced the industry to improve consistency and tighten tolerances, as lack of consistency is more easily noticeable when you have a left and right speaker that do not match each other, than it would be with a single speaker, or even with 2 speakers reproducing the exact same signal.
An additional issue which would not have been relevant without stereo is channel separation (in 2-channel components), which again might not seem as the biggest deal in today's audio world, but it surely is a cause of trouble in various stages during product development.
The most difficult issue to address without going into excessive techno-babble is frequency extension - a loudspeaker that extends far above 20 kHz would have better phase response in the range below 20 kHz than one that does not. This may not sound intuitive, but phase and amplitude are related by a mathematical relationship called the Hilbert Bode transform, which effectively implies that the phase response at any frequency is dependent upon the amplitude curve at all other frequencies as well, and vise-versa. The need for true-to-life phase reproduction is smaller when listening to mono, as some of its advantages do not come into play unless the spacial cues in the midbass, midrange and lower treble are also present. Otherwise you are adding information that while still somewhat useful, will not have its full effect as your brain is missing other pieces of the puzzle necessary for painting a full picture.
I hope that this information is helpful, but anyway I have limited my response just to the elements that off the top of my head had an effect on the way that products are made.
