Fortunately, there are lots of choices. In Washington, the Salish Lodge or Semiahmoo (Sehmiamoo?) are both good choices; Salish is closer to Seattle. If you want something a little more secluded, Lake Quinault Lodge down South and West nearer the coast is a good choice. Also closer to Portland there are some good options - out along the Columbia Gorge there is the Dolce Skamania Lodge; which has spa-type accommodations, and also even closer to Portland is Edgefield; a converted poor farm (though there is some night life there).

I will also email some friends of mine who've traveled the Northwest extensively for more recommendations and post again with those.
