Hi Rick:

If you can understand capacitors breaking in--- then--- think of the transformer's coil wound with conductors one on top of the other--- and an intervening dielectric separating all the conductors---

so that--- we have a "capacitor"--- two or more conductors separated by a dielectric with a difference in voltage potential.

A audio transformer is like the above plus more--- "break in" is a difficult concept to prove empirically--- but most people experientially do notice that audio transformers go through a "break in" period.
