Thanks for the ideas. After talking with PS a bit I think we will go with double rock with panel adhesive in between. I don't want to sacrifice any room size because I'm already down to 11-1/2" feet or so in width, so we have ruled out staggered studs. I guess I could say that isolation is important, but it's not critical since the building is free standing and the neighborhood is fairly quiet as long as the hillbillies aren't yelling at each other.
