Nice little project. Lots of fun, hope you and your son are enjoying it.
In 2008 I rebuilt/modified a pair of Hafler DH-200 mono's that I had bought new in 1979 using a combination of John Hillig's Musical Concepts offerings and boutique parts. At that time I consulted both John and Chris Venhaus at VH Audio(I was going with hard wired "flavor 4's") on the subject and both agreed that adding a safety ground would be detrimental. I ended up using the "flavor 4's" without the ground and have never looked back.
My advice would be to install an IEC socket and use a good quality 12awg or even 10awg from the IEC to the boards. This will enable you to experiment with different power cords and connectors easily.
