Tube amps are not usually bothered by even very complex loads. I have a pair of ESL-57's and have never found a tube amp that became unstable driving them. Not all tube amps sound good on ESL-57's- SETs tend to sound bad- but they won't exhibit the instability that some solid state amps show when connected to Quads.
You mentioned that you were worried about the power level- have you considered adding HT clamp circuits? They will give your treble panels total protection from anything but ridiculous power levels. I have a set of PK's clamp boards in my ESL-57s and I love being able to play the speakers on bigger amps and not worry.
