The XLR/RCA switch on the Maxxed-Out phono is simply a ground manipulation switch and has no effect on gain. The gain difference must be due to the internal way in which the two different inputs are handled by the MC275. Without a schematic of the amp you have (original or reproduction) I can't comment further.
