Your first alternative will work fine, so long as you bypass each current source with a capacitor to provide an AC ground. Otherwise, the effective output impedance of the output stage will go up and sonic performance will be marred (although it will still work, in the basic sense of making sound). However, as you have realized, the second idea listed in your post was what I was specifically suggesting. The current source forces the tubes to operate differentially, with an attendant improvement in sound (in my opinion).
