The problem with specifying a transformer for your application is the load, which has a relatively high capacitance being a piezoelectric transducer. So it's not really possible to predict the outcome with certainty.

The turns ratio of a 4 ohm to 3Kohm transformer is only 27, so the 1:40 recommendation you quote above would not give the suggested 4ohm to 300ohm impedance ratio also suggested in the quote. I suspect that the headphone manufacturer had the right idea with the 1:20 transformer, but that it simply didn't have the right characteristics to satisfy your perceived bass needs. Does the headphone manufacturer give a spec for primary inductance of the transformer they supply? Have you heard these 'phones with a system that gave adequate bass response, because one might question whether the 'phones are just bass-shy, irrespective of what the manufacturer claims?
