The /PP transformers are gapped for about 5mA of net current when the primaries are in series, as you suggest. Alt M'' is a PP to PP connection for power amp interstage use, while Alt N is PP to line out connection for preamp use. The S transformers have a Faraday shield between primary and secondary to equalize the stray capacitances and provide somewhat better symmetry at high frequencies when the secondaries are used for PP applications such as in a power amp interstage. The performance differences are relatively minor.
