Unfortunately, even a common cathode current sink will not guarantee DC balance, but it does aid AC balance. DC balance is easily achieved only through matched devices, as you allude to. I have the equipment necessary to match tubes and have done so. It does exact a toll in terms of tube cost though. For example, only about 15-20% of 6BX7GTs have two well-enough matched triodes in one envelope to meet my matching criteria for differential use. That's not too good for the wallet!
