Yes, using two of the hammond trnsformers indicated will be perfect, if you can find the space.

Also, on the resistors... The manual may need clarification (never really read it, sorry).

The purpose of the additional resistors is to avoid heating up the series regulation element (the piece with the big heatsink) up too much, if the input voltage is too high.

So if the supply gets too hot and you measure too high an input voltage under load as well, then you can add one or more of these resistors to "soak up" some of the extra voltage (and heat as well). As resistors generally can get much hotter without trouble than semiconductors this is often a good trade.

Why you measured more voltage open circuit with the resistor in is not clear to me, but I would argue the difference is within "experimental error" given mains voltages fluctuation etc.

At any extent, under load your AC dropped a lot, due to the resistor 'eating up" some of the voltage.

You could make another last try.

The datasheet limit for the 6B4 for heater voltage is probably 5% (like for most DH Tubes), so you can normally safely drop the heater voltage to 6V. So, remove all resistors and use a the thickest wire you can find for connections (within reason, no need to go 12 Gauge or such, but fairly hefty stuff neverthelss) and see what you get out and how much noise this produces.

It may be "good enough", even though it may not be ideal.

Still, the 8.5V/3A transformers are overall a better choice, with the size/mounting caveat.
