I don't know how the PS boards on the new Ella are arranged - I suppose they both have their own neg.bias supplies so you have a rectifier on each.
I doubt the diodes you've used in the bridge rectifiers will be the problem, as long as the positive output is being sent to the ground point on the PS PCB and the negative output goes to the original output point of the diode. I used a really cheap DB107 bridge first and although it didn't sound wonderful it certainly didn't hum. I suppose you could swap back in the original diodes as a test.
I'd still bet on a grounding issue, but you could also try adjusting the bias on each tube slightly - maybe one of the new pots isn't making a very good contact.
