I couldn't argue with any of those, but I can suggest two more:
La Mer: Szell/Cleveland on Epic/Columbia. An astonishingly beautiful performance, amazing orchestral virtuosity.
Prelude a 'apres-midi d'un faun: Stokowski and "His" Orchestra on Capitol/EMI, with superb solo work by flutist Julius Baker.
Here's an out-of-the ordinary one: Le martyre de St. Sebastien, Marius Constant/ORTF on Erato, also with clarinet and saxophone rhapsodies. Especially good if you like Erato's characteristic smooth sound.

in the end suddenly goes from voice to singing, with the gorgeous, luminous chord underneath?
Only Debussy could compose such an rapturous, unleashed "Amen" chorus which follows.
Next to Janacek anyway. : )
I'm really only familiar with the so-called "symphonic fragments" version, which I believe is the one that's usually performed. The original full theatrical version was apparently a flop. Funny, Debussy had very little time to complete the music and needed help with the orchestration from his student Andre Caplet, but he was so inspired by the concept he accepted the commission and pressed ahead anyway.
I'll have to check out the MTT version.
