I recommend the UF4007, for less SS switching noise. The vacuum rectifier(s) block SS diode switching noise, but (IMO) less noise to block can't be bad.
The 1 A. SS diodes should be adequate for 2X 5AR4s. However, "belt and suspenders" suggests 3 A. UF5408s.
You have the right idea. Wire 1 diode in each of the lines that connect the rectifier winding to the vacuum rectifiers. Don't forget that SS anode connects to the trafo and SS cathode connects to the tube.

Thanks, Eli, the main reason for me was the startup current rush that can occur with the Sovteks and destroy them correct?
Sometimes, a Sovtek 5AR4 will arc over at power on. The effect is voltage handling related. The SS diode in series raises the overall PIV capability and the arcing does not occur.
Don't take liberties with vacuum rectifier capacitance limits. Doing so can lead to permanent damage. :> ((
