Look at the schematic.
The O/P of the source selection circuitry feeds the recording O/Ps. All line level circuitry comes later.
The tape monitor I/P allows you to bypass the source selection circuitry, but it feeds into the line level circuitry.
You could set the tone controls "flat", center the balance control, and fully advance the volume control, to rely on your C/J preamps' controls. However, you will not hear the power section directly fed by the C/J.
The feature you need is preamp out/amp in. To get it the S5000 has to be modified. I gather that modification is an unappetizing thing.

It would be a fairly easy mod to add a preamp out and power amp in, as Eli mentioned. A lot of amps have this feature, and include a jumper for when they are not needed.
The correct place would be at the input to the pentode section of the 7199.
Remember to disable the power amp by removing the power tubes if using it as a preamp only. You can damage an output transformer by driving signal into no load.
Breaking in at the 7199 is the correct spot. Unfortunately, just doing that asks the VERY wimpy 12AX7 triode to drive potentially low impedance loads from its plate. :> (( That's not a good idea. The solution is simple enough. :> ) "Borrow" the ZVN0545A buffer from the tweaked RCA phono preamp. The MOSFET buffer can drive the fugly IHF "standard" 10 Kohm load.
Mere mix and match is not the only thing the preamp out/amp in feature is good for. Drive an electronic cross over from the preamp out jacks and you can multi-amp inefficient speakers with high SS power on the woofers and the tube amp driving everything else.
The critter can be skinned by more than 1 approach. ;> )

The S5000 has a decent preamp... but you, Eli keep on plugging that hybrid RCA with passive EQ...over and over...Please stop ! Your "upgraded" RCA Passive Phono preamp is not that good sounding ! Active Feedback EQ is sooo much more natural and classic sounding....IMHO of course...and YMMV of course.... If we want to hear "the hits as we remember them," then feedback EQ will always satisfy....
Please realize the original poster is happy with that phono preamp/integrated amplifier known as the S5000. He simply wants to have pre -out/main-in abilities...He simply has to add input/output jacks or cables at the right points...
Can't we enjoy the classic tube amps without changing them into the
morph you haven't even heard ?
I did not plug the RCA phono circuit. What's being discussed is adding a preamp-out/amp-in feature to the S5000. To make that work, the O/P of the line section has to be buffered. I said to take the MOSFET buffer from the tweaked RCA setup. I'm easily as lazy as the next fellow. I did not want to draw something up, when I already have a graphic that contains exactly what's needed.

Agreed
The ZVN-0545 needs to be in there if you want to correctly drive a SS sub because it has a much lower impedance and a 12AX7 by itself with a .15 cap in the output simply won't effectively drive a 10k impedance load. The ZVN-0545 does not have any ill effect on the sonics and it is much more capable than the 12AX7 by itself because it is able to decouple the 12AX7 from the low impedance load.
