As the 7199 has gone the way of the Dodo (extinct), you really have no choice. Rewire for the 6GH8 and, while you are at it, salt away some 6GH8s. All the useful pentode/triodes are out of production and fast disappearing. ;>(

Eli,
Any opinion on the 6U8 vs. the 6GH8?

Freak out...Far out...In out....
If you already have or can quickly acquire quality 6U8s, use them. As I already stated, the supply of useful pentode/triodes is dwindling rapidly. The 6U8 and 6GH8 are (more or less) interchangeable.
Unless 1 of the remaining tube makers steps up and starts making a useful tri/pent, we are going to be forced into taking "radical" measures, in order to keep fine equipment functional. In the case of setups (including Scott and Sherwood) that DC couple a pentode voltage amplifier to a "concertina" phase splitter, a possibility is a 6922 cascode DC coupled to a MOSFET "concertina" phase splitter. An obvious "gotcha" is the wretched PSRR of cascodes, which forces a person to regulate cascode B+.
