I have a Jolida JD-302CRC amp. It uses EL-34's for power tubes. There are four smaller tubes in the front two in the very front are 12AX7's and the two behind them are 12AT7's. Which are the preamp tubes? If I were to replace the preamp tubes with NOS tubes wouldn't that give me better sound?

12ax7 are the preamp tubes, the 12at7s are drivers for the output tubes. Upgrading the 12ax7 tubes will provide a bigger upgrade more likely.
I would look for 1950s or early 1960s U.S. made 12ax7, with the blackplate RCA and Raytheon being the best, or look for a triple mica U.S. made 5751. Any quality old stock 12ax7 or 5751 should be an upgrade from the stock tubes. The European tubes (Telefunken, Amperex , Mullard, Valvo, Siemens) are good but pricey.
