Hello there everybody,
Sorry for the question, new to tubes and new here. Hope to enjoy and learn a lot joining the AA community.
I'm guessing the power output tubes--KT88 because last in the signal chain, but I've been reading a lot saying it's the preamp output tubes--12AX7s? Is this true? How about the splitter--12AU7s? What's their ranking based on sound influence (not power/gain)?

I am really surprised by these replies. The output tubes, in your case the KT-88s. The small signal tubes or preamp tubes all have an influence, but the rubber that hits the road, are the KT-88s. The little guys are fun to roll I have about 100 next to me right for all of one roll-able tube right now and more are stored away.
Of the 2 pre amp tubes you mentioned the 12AX7 has the most gain, thus I would say that one after the power tubes.

They all make a difference, but I would say the first gain stage/input tube which in your case would be the 12ax7s.
I would experiment with the small signal 12ax7s and 12au7s first. Cheaper than rolling output tubes. Use matched pairs for each channel and try to build up a small stash. For those two types, I like vintage U.S. made tubes from the 1950s and 60s like G.E. Sylvania or RCA. Still relatively easy to find and cost effective.

Your splitter tube will have a lot if not the most influence.
Usually, the preamp tubes have a greater impact. There is usually one that is the bomb in a given system.
What kind of amp are you talking push pull or single ended? In single ended the power tube being the last link in the chain has a great effect. That is not to say that the driver or signal tube has a significant effect. But if you have an amp where you can switch power tubes you will hear the greatest sonic difference with the power tubes. In my single ended pentode amp that allows me to use 6l6, kt66, el37, 6550, el34, etc. It is very obvious that the different power tubes have a greater sonic effect than the driver tube. This amp can also switch the 6sl7 or 6sn7 driver tubes and changing all the different input brands of input tubes has a lesser sonic impact than the power tubes. cheers, Dak
I use a SEP amp too than runs pairs of 6V6-KT150's. With a given power tube the driver/ rectifier pairing has the biggest impact.
My amp is a Cayin CS-55A (AB1 PP). 12AU7s and 12AX7s for preamp, KT88 for power.

So for those that says the premp tubes, why is that? Because it's where the "sound processing" happens? Isn't it just sort of a "volume controller" or "power/gain resistor"?

Think about it logically: any corruption of the signal at the input to the amplifier will be amplified throughout the device by each subsequent stage.
The pre amp tubes are less expensive to 'roll' and different combinations there often dials the sound in. Which KT88's are you using?
Still the stock power tubes--Shuguangs I believe, though its branded Cayin. I like the sound right now very much, but I'd like to hear another sound--a more tubey kind of sound.
on your equipment. Some designers will make their equipment more or less tube sensitive. I am not sure how that is done but probably has to do with SS devices as regulators and current sources. Anyways, as you can read, people's experiences vary so you can only experiment with your own equipment and use this as an excuse to buy more tubes! While I am sure the tube dealers don't express this sentiment, but in my book the best sounding/lasting tubes were made before the 70's. cheers, Dak
Do a search here for warm 12AX/AU7's. Mullard is the standard answer but quality samples are getting hard to find. Since you rather are new to tubes I suggest buying from a reputable source and avoid epay unless you really are sure of what you are getting.
All that said, the new production JJ ECC803S is on the warm side of neutral and won't break the bank.
