My opinion:
Not much difference between 807s (assuming USA made).
Same for the 7C7s.
Same for the rectifiers.
12AU7s each have their own sound and would be the likely best place to tube roll.

Do you know if a 6085 / E80CC would work in Don's amp? A bit higher gain and I don't want to stress out and/or fry a transformer.

Rolling the power output tubes generally makes the most audible difference. It sounds like the power tube doesn't need to be rolled in this case. I have found very clear differences rolling 12AU7s myself. If you search this forum you'll find your fill of opinions and preferences. I will say most people highly praise NOS or just OS, more honestly. The one exception is current production Russian Gold Lion but the jury may still be in deliberations on that one.
