I have a few schottky diodes (SB360) in my spares box.
Anyone see any problems with swapping out the existing IN4002 for the SB360 ?

The 1N4002's function is purely protective. NO benefit will be realized if a change from PN to Schottky is made here.
Using 4X Schottky diodes of appropriate rating, instead of the commercial 7 A. bridge, is the place to reduce switching noise, in the schematic shown.

Putting Schottky diodes in place of the bridge will raise regulator dissipation, which may or may not matter. (But it's worth mentioning)
