Fender Steve would be your best bet to answer that being he works with it all the time. I think the biggest difference is the testing of the tubes and typically for guitar amps they want the tubes to exhibit a bit higher distortion as opposed to hifi use.

IME, most quality output tubes will sound good in either guitar or hi-fi amps. The best 12AX7 gain stage tubes that I've used are the BP Raytheon 12AX7A or 5751. RCA 7025. TFK ECC83. Valvo E83CC. Tesla ECC803S. Similar desired bottles for hi-fi use.
Best rectifiers = Mullard GZ34. GE or Sylvania 5AR4. Tungsol 5U4GB.
Best 12AT7 = Valvo or Siemens E81CC. US made NOS 12AT7WA (6201).
Best 6V6GT = Raytheon JAN-CRP 6V6GTY. RCA gray glass BP 6V6GT. Tungsol 6V6GTA. Sylvania VT-107A.
Best 5Y3GT = Bendix 6106. GE 6087. GE, Ken-Rad BP 5Y3GT.

Nah, tubes marketed towards guitar players/amps are Not tested or selected for higher distortion. If anything they're sometimes matched for plate current because many of them find their way into a class AB2 rig, with crazy HT and fixed bias. Otherwise it's just a label.
So yes they're fine for hifi, assuming a 6L6, 6550 or EL34 is.
Same goes for the 12AX7's, some are tested for Low microphonics,
but so what? You can do better in this area for hifi, cheap.

I happen to think it's all just marketing and BS and all the tubes are probably the same.
