Just traded for an early verions aq-1003 - need to bias tubes but can't figure out where to put the multimeter leads - the black obviously goes to the speaker, but the red lead - don't know. There are 4 black holes on the side - presume for adjusting the bias. But how do I get a measurement? I'm sturmped and the manual that I have is incomplete.

...and photos online of the 1003, here is what I think you need to do:
Choose VB1 on the rotary switch. Put (actually I think the red meter lead) into the socket hole on the far right. The black lead goes onto the chassis, as ground (I just use the top of one of the chassis screws). Adjust the bias in the first hole on the left with a screwdriver. That is likely to be VB1. Switch rotary to VB2, and move to second pot from left, etc.
No idea what the bias setting should be...hopefully that is in the manual!
I am 98% sure this method will work, good luck!

Worked great - keeping the bias around .35. Have you a recommendation re: tube?
for a balanced powerful sound and slightly less rich midrange, and my personal favorite the Genelex Gold Lion KT-77 for a powerful sound a bit more tilted to the mids than the EHs...
