I'd throw down for that EML driver tube with a mu of 30.

EML30 is an interesting tube, but it requires too much alterations to the monoblocs. High Va and Ia which require change of the transformers etc.What about some of these which will fit in without too much alterations:

For the 30A, 250V on the plate, 5mA of current and 2.5V of bias through a CCS should be fine. I'm assuming your power amp isn't fixed bias, which means you have about 300V of B+.
Octal sockets for 30A fits perfect, I always use cathode bias, and the B+ is 300V as you guessed.
Is the CCS for the plate supply? Who is making CCS and which type to use? Can I use plate choke instead?
This is promising, but I must rely on you as my knowledge is limited.
Saying that, I have built 6-7 SET amps in addition to several tube preamps and much, much more from schematics and good advices. All have been working perfectly from first moment and never failed. But I use much time in planning and quality control.

You can get an acceptable CCS from K&K audio. If you'd like to use a plate choke instead, use a Magnequest EXO-010. You could then move to an operating point of 10mA and 2.5V of bias at just under 300V on the plate.
