Just an option, you could build an unregulated supply and use a variac ahead of it. If you build the variac into the PS case, you could also bring the AC output to a socket on the front panel as a source of variable AC. A switch could be installed on the panel for AC to the PS. Just something to think about, might be easier than building a regulated supply from scratch, especially if you want high current/voltage capability for testing large amps.

Listening to an amplifier though a variac, on a well-thought-out high quality hi fi system, will be an added sonic compromise.

Just build a conventional choke loaded supply and run it from a VARIAC
