I have a DIY SET amp using 1626 output tubes and 5K series output transformer.
I would like to be able to use these as a headphone amp this summer to demo a musician friends CD at music festivals, and I'm seeking advice on what it would take to convert/adapt for headphone use. I have some 10year old Koss phones, not sure of the impedance right now.

You all gave me enough info to be able to figure out what option I want to try. I'll start with the resistor Chris suggested since I already have them, and study up on the other ideas. Hopefully the amp will be quiet enogh to proceed furthur.

Depending on the amp's noise floor and sensitivity and impedance of the 'phones, the optimal values of R and configuration will differ.
A transformer to match the specific 'phones exactly is the optimal way, but others have used variable transformers like ASL used to make.

This can be a problem when converting a speaker driving 2A3 or 45 into a headphone driving amp. Mfrs of headphone amps using these amps take special care when designing their filament power supplies.
Observe, don't think
The traditional way is to put an 8 ohm resistor across the speaker outputs and wire up a phone jack for your headphones from the speaker outputs.

So the 8 ohm resistor loads the xfmr and since it is so low it dominates?
Sounds easy enough....is the fidelity acceptable? I was half expecting to need a different output xfmr....this sounds too easy ;)

You can actually use a higher value resistor than 8 ohms (20 or 30 ohms can work) and the fidelity will be still good. You want to make sure the amp never sees an open circuit. Yes, this is pretty easy.
