I would think that an amp like the EICO HF-20 would be ideal for this application. It is a mono integrated using the Williamson circuit and is nice looking in a retro-industrial sort of way.
Replace the mono volume control with a stereo 100k pot from Radio Shack and hook it up to one speaker. The reason to replace the volume control is so you get channel isolation for the output of the IPod. Each channel goes into the pot and the wipers are in parallel going to the input tube.
