I think your approach makes a good deal of sense. SET is not for everyone. If you do decide to move up, I can highly recommend DeHavilland Electric Amplifier's 845 monos, the ARES 845-G. It's a steal at that price. One nice thing about the 845 tube is that you don't need a highly sensitive loudspeaker, as long as it is a relatively easy electrical load.
Follow Ups:
On the other hand, starting with an inferior amp (not saying necessarily the Dared) can put you off to a type of amp that has really a lot to deliver.

This is an exciting time for me with new speakers and set amps...
Terrific site and very interesting read about designers thoughts relating to set amplifiers subject matter, different tubes and topologies. Ive never heard of Dehavilland but theyre a line Ill take a serious look at,monoblocks forthat price,wow. Aesthetically I could wish for more, but as always pictures dont always do justice and sound, as always, is most important!
