I must be missing something, how is the cathode winding doubling the power?

The technical details are above my education level. My guess is that the xfmr impedance is lowered - thus power is raised. Probably an inquisition into the McIntosh circuit may help. Maybe one of the xfmr Gurus could explain better.
A SE circuit built around a 50-50 split transformer might be quite useful. The drive requirements are high, as gain in the power stage is a wee bit less than two. For something like a pair of big sweep tubes, it could be quite interesting. 500 Ohm loading, and keep the grid current drive could deliver the goods. When McIntosh went to low g2 voltage sweeps in the MI350 there were several primary windings( 5?) to cover the drivers, cathode followers, and screen grids. Straight plate loading, with enough plate-to-grid to drop gain to the same level would be far easier to implement I think.
