THe only thing that keeps me from pulling the trigger on the SE OTL from Transcendent is that I know it needs a lot of negative feedback to really work with a normal speaker. I am sure that this has undesirable consequences on the tonal qualities of the amp. Into a headphone you don't need the feedback because the impedance of the headphones is much higher.
However, a SET with a mediocre output transformer has plenty of sonic problems as well. I don't know if the Bottlehead has a good output transformer or not. They don't really discuss it on their website.

I have the Paramounts. I am not an expert but from what I have read and heard with my own ears, yes, they have very good stock transformers in them.
I have a Transcendent SE OTL. I almost hate it. It made me never want to try another OTL. One doesn't need a distortion analyzer, or golden ears to hear all the odd order distortion. My guess is more than a PP. A PP could sound much better.
I also have BH amps with stock OPTs and one with MQ nickle pin stripes. They sound fine.
Big speakers and little amps blew my mind!
The Paramount iron components are my designs. On this forum I am only permitted to answer specific questions, but you can ask on the Bottlehead forum if you want a more extended response.
Having built kit from both, this is a tough one. The Mini Beast will give you more headroom to play with and will be able to power more speakers. I have one of his T-16 OTL's and it is a real keeper. Very analytical and fast. It hides nothing. The Bottlehead is also a wonderful amp and with decent 300B's will shine with a glorious midrange and is very capable of deep tight bass. Powered by a 2A3 will reduce the approximate 8.5 Watts to 3.5.
There is no right or wrong here. The more important item is just what kind of speakers are you going to power? SETs love horns and full range drivers. The Mini Beast can do more with more.
It all comes down to taste
Kit wise, they are both well laid out and the instructions for both are clear and intelligently written.
