Explain to me the advantage of having of having 5 small signal tubes per channel + and interstage transformer? Admittedly, this is a PP amp and so it needs to have a phase inverter. AD's explanation of the circuit is on pp 97-98.

Good find! That sure matches the description.
For that circuit, the first four triodes are the Williamson phase splitter/driver which has enough gain to allow substantial global feedback without using modern, less linear, high-mu triodes. The interstage transformer allows more voltage headroom for the drivers, hence lower distortion. The cathode followers allow Class A2 operation for greater power. And since the cathode followers need a negative voltage source anyhow, a tube-based servo bias is easily implemented. So there are reasons for each tube.

There is of course not enough information to determine the design, much less the potential advantages of each detail.
