Would it work? You need to check if Apple allowed it in Bootcamp or if there is a way to hack this.
I was recently forced to spend some time on a Mac trying to do real computer work, not just web-surfing, listening to music, watching cat videos and updating face-book or testing using Audio Software.
I was forcibly reminded why I cannot stand Apple products. I'd rather herd Cat's for a Week instead...

I do Linux, Unix. Mac OS, and can't stand Windows (but I run it on my Mac if necessary). Mac OS is fortunately very 'Unix' under the hood when you open a terminal or console to take a look.
Just how old is your Mini?
Its a 2006 I think...still in great shape. Gave it to my wife shortly after I bought it.

Ah, my first Mini was about a year newer than yours 2007 with 1.83 GHz (T5600) Intel Core 2 Duo and a whopping 3GB. It performed great a as music server but I haven't used it in several years now.
I used a Firewire DAC back then.
Does it have a decent display jack?
It would make a nice little media center for a TV.

Fidelia 1.6.0 is compatible with Snow Leopard. It's a nice audio app for general use, with a fun GUI.
For the Mac Mini, try a Lifatech Silflex digital optical cable connected to a Monarchy Audio DIP, then connect your favorite S/PDIF digital coaxial cable to the DAC of your choice to experiment with a more old-school (non-usb) digital front end solution.
