Have you tried to see if the bridge will find the connect wirelessly without frigging around with the airport express?
I ask because of how you phrased your post. If the Sonos does connect it is usually fairly stable.

But when streaming Lossless FLAC from time to time it just can't keep up. I suspect that the SONOS does not have a large cache to play from, as compared to the Lossless FLAC players as are typically loaded into a computer.
Plus the listening room is on a third level, one above the office where the router/wifi transmitter/bridge sits.
I used a 'ethernet through power lines' solution till I changed pre-amps. The new one picks up the data in the tube circuitry somehow and sends it to the power amps as an audio signal. =:-0

I'm not sure as I have never had an issue with it.
I stream AIFF files with no trouble whatsoever. (except if lightening is around.)
I think by default Sonos transmits on channel 6 but you have an option to change to either channel 1 or channel 11.
Also you may be getting some interference from a cordless phone/microwave/wireless router etc. You can submit a "diagnostic" to Sonos (especially if you run it when you are getting the dropouts) Their tech support is first class and they may see an issue with your setup. They could also run you through the best way to connect to the AirPort Express.
I won't prattle on here now, but if you want to know how to change channels on the Sonos or submit a diagnostic to Sonos tech support let me know and I will run you through it, it is pretty straight forward.
I connect to the bridge from my PC via Ethernet and then wirelessly to the connect and then via toslink into an AA DAC. I have 3 other connects into 3 other systems. It works well for us.
